Gula melaka in the bakery: cakes, biscuits and bread

Blocks, granules or syrup? Which form of gula melaka suits cakes, biscuits and bread, and how to order by the kilo.

Gula melaka in the bakery: cakes, biscuits and bread

Gula melaka is turning up more and more on bakery counters, from gula melaka pandan cake to biscuits and sweet buns. Its caramel flavour gives everyday bakes a local identity. But the form you choose affects texture, colour and how you work in the kitchen. This guide covers which form suits which bake, how to swap it for brown sugar in general terms, and how to order by the kilo for a bakery.

Three forms of gula melaka and where they fit

Warisan Gula Melaka sells three forms: Gula Melaka Blocks, Gula Melaka Granules and Gula Melaka Syrup. Each has its place in a bakery.

Grated blocks: for cakes and kuih

Blocks can be finely grated into a cake batter, or melted down for fillings and layers. They suit gula melaka pandan cake, apam and kuih that want a strong gula melaka taste. Grate only what you need for one batch.

Granules: for biscuits and dry mixes

Granules measure easily and blend evenly with flour, which makes them practical for biscuits, crumbles and dry mixes. They can also be creamed with butter like ordinary sugar.

Syrup: for glazes, drizzles and wet batters

Syrup is ideal for brushing buns after baking, soaking a sponge, flavouring cream fillings, or stirring into pancake and muffin batters. It also saves time because there is nothing to melt.

Swapping brown sugar for gula melaka

Many bakers try gula melaka in place of brown sugar. The notes below are general; test a small batch before changing a recipe you sell.

Start with the same weight

Use Gula Melaka Granules or grated block at the same weight as the brown sugar in the recipe, then taste and adjust. Gula melaka has a deeper caramel flavour, so some recipes may want slightly less.

Watch the moisture

If you use syrup, remember it adds liquid to the batter. Cut back a little on the other liquids so the texture does not end up too wet.

Colour and baking time

Bakes made with gula melaka tend to brown faster in the oven. Keep an eye on the surface, and cover loosely with paper if the top darkens before the inside is done.

Pairing it with other flavours

Gula melaka sits well with pandan, coconut milk, grated coconut and coffee. These pairings are popular in layer cakes, santan buns and coconut biscuits.

Gula melaka ideas for your counter

If you are introducing gula melaka, start with one or two products you already sell and add the flavour to those.

Cakes and bread

  • Gula melaka pandan cake, with syrup poured over while the cake is still warm.
  • Santan buns filled with coconut and gula melaka.
  • A Swiss roll with gula melaka cream.

Biscuits and pastry

  • Butter biscuits made with Gula Melaka Granules.
  • Small tarts with a coconut and gula melaka filling.
  • Pancakes and waffles with syrup for a breakfast menu.

Testing on the counter

Bake a small batch first and see how customers respond. Items that sell well can join the regular menu, which also makes it easier to work out how many kilos you need each week.

Work out your monthly usage

Note how much gula melaka goes into each product, then multiply by a week of sales. That gives you a fair idea of whether your orders land in the retail or wholesale tier.

Delivery and packing

Every order is vacuum packed, and our products are certified Halal by JAKIM, something many bakery customers ask about. The delivery charge is confirmed by address, whether your bakery is in Shah Alam, Ipoh or Sandakan.

About the ingredient

Our Gula Melaka Blocks are cooked and concentrated from coconut palm sap, with no granulated sugar and no preservatives added, as the maker states it. That makes it simple to explain on your own labels or to customers.
