Gula melaka cendol recipe for home and for selling
A step-by-step gula melaka cendol recipe: syrup, coconut milk, cendol and ice, plus how to scale it up for a stall.

Good cendol starts with a thick, fragrant gula melaka syrup. Coconut milk, green cendol and shaved ice all matter, but the syrup is what brings people back. This recipe is split into four parts: syrup, coconut milk, cendol and ice. We start with home quantities, then share how to scale things up for a stall or event orders.
Ingredients for a home kitchen
These amounts make roughly six to eight bowls, depending on the size of your bowls.
Gula melaka syrup
- 250 g Gula Melaka Blocks, chopped small or grated
- 50 ml water
- 2 pandan leaves, knotted
This is the same ratio our maker gives for larger batches: 1 kg gula melaka to 200 ml water.
Coconut milk
- 500 ml thick coconut milk (santan)
- A pinch of salt
- 1 pandan leaf
Cendol
- 100 g hun kwe flour (mung bean flour)
- 600 ml pandan water (pandan leaves blended with water, then strained)
- A pinch of salt
- A large bowl of iced water to catch the cendol
To serve
- Finely shaved or crushed ice
- Boiled red beans, if you like
Method, step by step
1. Cook the syrup
- Put the gula melaka, water and pandan into a small saucepan.
- Cook over low heat, stirring, until the sugar has fully dissolved and the syrup has thickened.
- Strain it for a smooth finish, then let it cool.
There is a more detailed walkthrough in our guide on melting gula melaka.

2. Prepare the coconut milk
Warm the coconut milk with the salt and pandan over low heat. Stir often and do not let it boil hard, or the milk may split. Take it off the heat, cool it, then keep it in the fridge until serving.
3. Make the cendol
- Whisk the hun kwe flour, pandan water and salt together until smooth.
- Cook over medium heat, stirring constantly, until the mixture is thick and turns translucent.
- Press the hot mixture through a cendol press straight into the iced water.
- Drain once the strands have firmed up.
Texture tip
If your cendol is too soft, the batter probably needed a little longer on the heat. If it is too firm, shorten the cooking time slightly next round.
4. Assemble and serve
Add cendol and red beans to each bowl, pile on the ice, pour over the coconut milk and finish with gula melaka syrup on top. Let everyone stir their own.
Common mistakes to avoid
- Syrup that is too thin: runny syrup sinks to the bottom and the gula melaka flavour gets lost in the ice. Cook it a little longer, until it coats the back of a spoon.
- Coconut milk heated too hard: split coconut milk leaves an oily layer on top.
- Ice added too early: assemble each bowl just before serving so the ice does not melt and water everything down.
Scaling up for a stall or event orders
When cendol is on sale every day, the hard part is preparing everything quickly and consistently. A few general pointers help.
Syrup in big batches
Many sellers cook syrup at 1 kg gula melaka to 200 ml water and multiply by the number of kilos. Use a heavy-based pot, stir often and strain before bottling. A squeeze bottle with a spout makes it easy to give every bowl the same amount of syrup.
Coconut milk and cendol
- Make the coconut milk and cendol on the day you sell them, and keep the coconut milk cold throughout trading.
- Use fixed-size ladles for coconut milk and cendol so every bowl tastes the same.
- Keep cendol and coconut milk apart until you assemble each bowl.
Menu variations
Beyond plain cendol, a stall can offer cendol with glutinous rice, with red beans, or with durian when it is in season. The same gula melaka syrup works across all of them, so one batch covers a longer menu.
Which form of gula melaka to buy
Gula Melaka Blocks suit sellers who cook their own syrup. Gula Melaka Syrup saves time for stalls that want less work at the stove. Blocks are RM18/kg for 1–99 kg and RM15/kg for 100 kg and above, while syrup prices are confirmed on WhatsApp. See the options in our prices section.
