How to store gula melaka after opening the vacuum pack

A practical guide to storing gula melaka blocks, granules and syrup once the vacuum pack is open: cool, dry and airtight.

How to store gula melaka after opening the vacuum pack

The vacuum pack arrives, you snip it open and that caramel smell fills the kitchen. Then comes the practical question: how should you store gula melaka from here so it keeps its flavour and texture? The short answer is that gula melaka dislikes three things: damp, heat and open air. This guide covers how we handle blocks, granules and syrup once the pack is open, whether you cook at home or run a busy kitchen.

Why gula melaka needs care once opened

Every Warisan Gula Melaka order is vacuum packed to keep it fresh on the way to you. The moment the seal is cut, the sugar meets kitchen air, and Malaysian air is humid for most of the year.

Moisture is the main problem

Our gula melaka is made from coconut palm sap that is cooked and concentrated, with no granulated sugar and no preservatives added. Sugar like this draws in moisture easily. Left exposed, blocks turn sticky on the surface, granules clump together and the sugar can pick up other kitchen smells.

Heat and direct sunlight

A shelf that catches the afternoon sun or sits beside the gas hob will soften the sugar and make it sweat. Pick a cool, shaded spot away from the sink, the kettle and the oven.

How to store each form

Blocks, granules and syrup each need slightly different handling. Here is a simple routine for each.

Gula Melaka Blocks

  • Take out only the blocks you need. Fold the rest of the pack tightly and place it inside an airtight container.
  • If a block has been cut, wrap the exposed face in cling film before putting it away.
  • Grate or chop only what today's recipe needs. Grated sugar left sitting in a bowl soaks up moisture quickly.

Gula Melaka Granules

  • Move them into a glass jar or a plastic tub with a tight lid.
  • Always use a clean, dry spoon. A drop of water or coconut milk from a wet spoon is enough to start clumping.
  • Close the jar straight after use rather than leaving it open while you cook.

Gula Melaka Syrup

  • Keep syrup in a clean, dry bottle with a tight cap.
  • Wipe the neck of the bottle after pouring so no sticky syrup is left on the rim.
  • If you make your own syrup, let it cool completely before bottling. Our guide on melting gula melaka walks through the method.

Small kitchen habits that make a big difference

In a home kitchen

Give your gula melaka a fixed spot on the same shelf, away from the stove. A small label with the date you opened the pack tells you which container to finish first.

For kuih sellers and caterers

If you buy many kilos at once, avoid opening every pack on the same day. Open one at a time and leave the rest sealed in their original vacuum packs. This helps most in hot, busy kitchens, such as sellers in Kota Bharu, George Town or Kuching who cook kuih every morning.

If the sugar has hardened or clumped

Hardened gula melaka can still be melted. Warm it with a little water over low heat until it dissolves, then strain it and use it as syrup. Clumped granules can be broken up gently or simply melted down for cooking.

Signs your gula melaka needs a closer look

Trust your senses. If the smell has changed and no longer reads as caramel, or you see any mould on the surface, do not use it. Most of these problems are avoided with an airtight container, a dry spoon and a cool storage spot.

Buy to match how much you use

The easiest way to keep things fresh is to order in step with your usage. Gula Melaka Blocks are RM18/kg for 1–99 kg and RM15/kg for 100 kg and above. Granule and syrup prices and pack sizes are confirmed on WhatsApp. See every option in our prices section.
